Shrimp Tacos with Garlic Avocado Crema

I love love love tacos. Yummm! Seafood also so yummy i could eat some sort of seafood everyday. Put tacos and seafood together and its a perfect combo. The Garlic Avocado Crema is so good i could eat it with a spoon. I actually was about to go to the store for some tortilla chips just to dip in the sauce. Then there is the slaw which gives these tacos a nice crunch. I mean whats some shrimp tacos with the nice little crunch from the slaw. 
 I know not everyone likes corn tortillas i personally grew up eating them so they are better to me with most things than flour. Growing up in L.A. eating street tacos (which are the best ever) i just can imaging using flour tortillas for some good tacos. However if flour is what you prefer use them. Im sure they will be just as good. So now here's how to make it 

Ingredients:

1 pound frozen medium shrimp
1 tablespoon olive oil
6 garlic cloves, peeled

2 limes
1/2 cup cilantro leaves plus more for garnish
1/4 cup low fat sour cream
1 avocado, peeled, pitted and chopped
1/2 teaspoon kosher salt
8-12 corn tortillas or flour if you prefer
1/2 cup of slaw
feta cheese
mild tomatillo salsa verde
black pepper


Directions: 

We bought all ready cooked shrimp but if you use non cooked shrimp that's fine too. Thaw the shrimp, if needed, peel the shells off the shrimp and discard. Season the shrimp with a sprinkle of kosher salt and pepper gently toss and set aside. Heat the olive oil in a large skillet over medium heat. Smash 5 of the garlic cloves with the side of a heavy knife and place in the skillet. Reduce the heat to low and simmer the garlic for 10-15 min. turning the cloves occasionally until the garlic is fragrant and lightyly browned all over. Remove the garlic from the pan, set aside and remove the pan from the heat you will be using this later for the shrimp. While the garlic is simmering, finely mince the remaining clove of garlic and add to the bowl of a food processor. Chop the softest parts of the reserved garlic and add to teh food processor. Add the juice of 1 lime, the 1/2 cup cilantro leaves and and whiz the food processor until the leaves and garlic are finely chopped. Add the sour cream, the chopped avocado and the kosher salt and whiz until the mixture is smooth and combined, this is your avocado crema.
Bring the pan with the reserved garlic oil in to a medium heat and add the shrimp. cook for about 2 min. on each side. Stack and cover the corn tortillas in a dish towel and microwave for 30 seconds to soften. For each taco, stack 2 corn tortillas together and spread a spoonful or 2 of the avocado cream on top of th
e tortilla. Add some slaw shrimp and top with feta, salsa and garnish with cilantro leaves. Serve with limes.



GREEK CHICKEN AND RICE

This meal was AMAZING!! One of my husbands favorite things ive ever cooked. The spices were simple but the flavor was perfect. The chicken came out so nice and tender and it was a very easy dish to make. I hope yall enjoy!

Ingredients:

For the chicken and marinade:

5 chicken thighs or breasts
2 whole lemons, zested and juiced
2 TBS. oregano
4 cloves of garlic, sliced
1 tsp. red pepper flakes
1 tsp salt
2 TBS olive oil

For the Rice:

1 1/2 TBS olive oil
1 small onion, diced 
1 Cup long grain rice
1 1/2 cup chicken broth
3/4 cup water
1 TBS dried oregano
1 tsp salt

Directions: 

Combine lemon juice, oregano, garlic, red pepper flakes, salt and olive oil with chicken in a large ziplock bag and marinate over night.
Heat oven to 350 degrees. Remove chicken from the marinade. Keep the rest of the marinade you will need it for the rice. Add 1/2 TBS of olive oil in a heavy skillet over medium hight heat. Add chicken to the skillet and cook until they turn golden brown on both sides. Remove and reserve for later. Pour out the excess fat from the pan and wipe pan down. Add 1 Tbs of olive oil to skillet over medium- high heat and saute the onion. Add the rice, chicken  broth, water, oregano, and salt. Pour the rest of the marinade in the skillet and mix well. 
Allow the liquid to simmer for about 30 seconds. Add the chicken on top of the liquid and cover with a lid. Bake in the oven for 35 min. Remove the lid and cook for another ten minutes or until the liquid has absorbed and the rices is tender. 


BUFFALO CHICKEN PIZZA

I am constantly craving spicy food, a big spicy craving of mine is buffalo wings. I don't eat wings though so I always get the boneless buffalo wings. I have been dying here craving them and have yet to find them anywhere. Then this pizza came into my life and I knew it was gonna be the best thing ever. Sure enough it hit the spot with my craving. The pizza was soo good. I cant wait to make it again and again.

Ingredients:

1 package of pre-baked crust or homemade
1 cup of diced cooked chicken breast
3 TBS Buffalo Wing Sauce
1/2 cup  Buffalo wing sauce
1 (4 oz Package) crumbled Blue Cheese
1 stalk of celery thinly sliced
1 cup shredded mozarella


Directions:

Preheat oven to 475 degrees.  Either use a pizza pan or line a baking sheet with aluminum foil. Place pizza crust on the prepared baking dish. Mix the chicken and 3 TBS wing sauce together in a bowl until evenly coated. Spread the 1/2 cup wing sauce on the pizza crust. Top with blue cheese and mozarella. Bake until pizza is cooked through and cheese is bubbling about 12 min.


This is very spicy so if your not a huge spicy fan you can mix ranch in with the buffalo sauce or use less sauce. Our pizza was so spicy we were sweating but we love spicy food.

CREAMY CORN CHOWDER

This is a great recipe. Its filling and perfect for all these cold days/nights we have been having. Best thing its low calorie and still has cheese and bacon OMG yum, ya just can't go wrong with those 2 things.

Ingredients:
4 slices bacon
2 TBS unsalted butter
1 onion, diced
1 red bell pepper, diced
2 TBS flour
2 cups skim milk
1 (14.75 ounce) can cream style corn
1 (12 ounce) package frozen corn kernels
1/8 tsp cayenne pepper
1/4 tsp salt
black pepper, to taste
1/2 cup reduced fat sharp cheddar shredded cheese

Directions:

Cook the bacon until crispy, then crumble the bacon. Heat a large pot over medium heat and add the butter. Once the butter is melted saute the onions and red bell pepper, cook until softened, about 8 min. Turn heat to medium-low and stir in the flour and cook for 1 min. Stir in the milk, creamed corn, frozen corn, cayenne, salt and pepper. Cook for 15-20 minutes, stirring frequently. Make sure to stir or the flour will clump at the bottom. Stir in the cheese and crumbled bacon, until cheese is melted.

DRESDEN/ DRESDEN STRIEZELMARKT

 Pat and I decided to use Explore Europe Travel for the first time. We booked a trip to the Dresden Christmas Market, one of the oldest documented Christmas Markets.
 The city was absolutely amazing! The Christmas Market just made Dresden that more amazing to see for the first time.
 We started off with a tour of the city of Dresden and learned some of the cities history. Our tour guide was full of Information on the 2 hour tour.

As our day came to an end we were able to enjoy a few lights before leaving. 


All in all much fun was had by both of us and our friends who were with us as well. This Christmas Market has 3 or 4 Christmas Markets in the city. One of the Markets is a Medieval one. It gets very packed especially in the evening. It is huge. I would absolutely go back just to see a little more of the city, and see more of the beautiful architecture that is there.

LUDWIGSBURG PUMPKIN FESTIVAL

 This past weekend (Sept 19-20) started the first day of Oktoberfest and the Ludwigsburg Pumpkin Festival. We decided to skip Oktoberfest for now. We may go later but for now we decided to skip it, especially for the first weekend where its sure to be super packed.
 We, instead, decided to go to the Ludwigsburg Pumpkin Festival. I had heard about it through facebook. It looked very interesting and different from anything in the states. The theme for this year 2015 is Pumpkins Taking Flight. This pumpkin festival is the worlds largest. It is located in Ludwigsburg.. Baden- Wurttemburg. Each year they typically display over 400,000 pumpkins. They make huge sculptures to go with there theme.
In the past years some of themes have been Sports Themes, Jurassic Park Theme, Ocean Theme, Switzerland Theme, Fairytale Theme, and an Egyptian Theme.
The festival also features and annual pumpkin boat race, where participants paddle across a lake using a hallowed out pumpkin. They also feature an annual European championship for the heaviest pumpkin. They also have tons of pumpkin dishes to choose from, to include pumpkin burgers, pumpkin wine, pumpkin popcorn and pumpkin cake.
We enjoyed it very much it was super fun. They also had a castle/tower where Rupunzel lives and you can see her long hair hanging down the tower. If you yell "Rupunzel Rupunzel lass dein Harr herunter!" ( Repuzel Repunzel let down your hair) here hair will lower down the tower. This year there was also a wonderful pumpkin carving team out here. We didnt get to see him work but we got to see his finished pumpkins which were hilarious. "Hubbard Family" by Ray Villafane from Villafane Studios USA. If you are every in the area during From September to November this is a must see.
This was for sure one of the best Pumpkin Festivals- Events i have ever seen and been too. Below are some pictures.
