Shrimp and Pesto Pizza with Goat Cheese


I got this off of pinterest my fav website ever lol. It looked soo good and i pin so many different things and rarely actually do them or use the ideas so i figured i should look at some of the foods i found on there and actually start making them haha. So here it goes.. this one btw is pretty fricken amazing. ENJOY!!

Ingredients:
Shrimp
Garlic and herb seasoning
Pizza Dough of your choice
Pesto
Mozarella
Goat Cheese
Olive Oil

Directions:
Sprinkle Garlic and Herb Seasoning on the shrimp and lightly sautee. No need to took all the way as it will cook more when it goes in the oven to bake. Get your pizza dough ready brush pizza dough with olive oil. Spread Pesto on the dough then add the shrimp and then sprinkle mozarella cheese on top and then put spoonfuls of the goat cheese on top.

Notes: You can use either frozen or fresh shrimp i used frozen. I didnt put exactly how much of anything as you can put as much or as little as you like :)

















Mini Cherry Cheesecakes

These will be a  big hit at any party or to take just have for dessert. They are simple to
make and so yummy. Enjoy!

Ingredients:

NILLA Wafers

2
pkg. (8 oz. each) PHILADELPHIACream Cheese, softened

3/4
cup sugar

2
eggs

3/4
cup cherry pie filling

Directions:

PREHEAT oven to 350°F. Place 1 wafer in bottom of each of 12 paper-lined medium muffin pan cups; set aside.
BEAT cream cheese and sugar in small bowl with electric mixer on medium speed until light and fluffy. Add eggs, 1 at a time, mixing just until blended after each addition. Spoon evenly into prepared muffin cups, filling each cup 2/3 full.
BAKE 30 minutes. Turn off oven; open oven door slightly. Let stand in oven 30 minutes. Remove from oven; cool completely. Top with pie filling. Refrigerate at least 1 hour before serving. Store leftover cheesecakes in refrigerator.


GRILLED VEGGIE SANDWICH


This is so YUM! The sauce was my favorite part. The veggies are so yummy grilled and since we live in the 
middle of nowhere we couldn't find any focaccia bread so we ended up using ciabatta bread.

Ingredients:
  • 1/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/8 cup olive oil
  • 1 cup sliced red bell peppers
  • 1 small zucchini, sliced
  • 1 red onion, sliced
  • 1 small yellow squash, sliced
  • 2 (4-x6-inch) focaccia bread pieces, split horizontally
  • 1/2 cup crumbled feta cheese

Directions:

In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
Preheat the grill for high heat.
Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill,
and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may 
take a bit longer. Remove from grill, and set aside.
Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill
 cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so 
the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.









BEEF BROCCOLI

This is an awesome recipe it taste just like the stuff you would get from a good chinese resturant. I was kinda iffy on making this because i didnt think it would turn out good, especially the meat (im very picky with meat), but this was soooo yummy. The meat was perfect and the sauce OMG soooo good. ENJOY!!

Ingredients:
1 lb round steak, sliced in thin strips
1 clove garlic, minced
1/2 cup chopped onion
1 can beef broth
2 tbsp cornstarch
2 tbsp soy sauce
1/4 tsp garlic powder
4 cups broccoli florets
4 cups cooked rice

Directions:
Coat skillet with cooking spray and heat over medium heat for one minute.
Add beef, onion and minced garlic; stir fry until brown. Remove the beef to a plate and keep warm.
Add half the broth and broccoli to pan. Cover and simmer until broccoli is tender and crisp.
Mix Cornstarch, brown sugar, garlic powder, ginger, and soy sauce with remaining broth until smooth; add to the pan. Cook until mixture begins thicken, stirring constantly. Return beef to mixture, stir and serve over rice.




Note: I used brown rice for this because its way better for you but i think white rice would have been better with this. 

Chocolate Guinness Cupcakes with Whiskey Ganache filling and Irish Cream frosting

CHOCOLATE GUINNESS CUPCAKES WITH WHISKEY GANACHE FILLING AND IRISH CREAM FROSTING

So ive decided to add some baking recipes ive made since i dont manage to cook everyday with my busy life :) So heres a great cupcake recipe. My husband absolutely loved these i made them for him as hes Irish and wont be home yet again for St Patrick Day. Last year i ran a St Pattys Day 5k at our last post this year im not sure if they will have one at this post. I ran the 5k for my hubby. This year i made cupcakes lol way easier haha! Hope you enjoy these yummy cupcakes as much as we did.

THE CUPCAKES:

  • 1/2 cup Guinness (or other stout)
  • 1/2 cup butter (melted)
  • 3/8 cup (aka 1/4 and 1/8 cups) cocoa powder
  • 1 cup flour
  • 1 cup sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 3/8 cup (aka 1/4 and 1/8 cups) cup sour cream
DIRECTIONS:
  1. Preheat oven to 350 degrees (F)
  2. Melt the butter (on the stovetop or in the microwave)
  3. Add Guinness and cocoa powder and stir to combine well
  4. In a large bowl, mix the flour, sugar, salt, and baking soda
  5. Stir in egg and sour cream
  6. Add chocolate mixture and stir well
  7. Place cupcake papers in the muffin tin
  8. Spoon the mixture into the tin to fill about 3/4 full (you'll have enough for 12 cupcakes)
  9. Bake for 17 minutes
  10. Remove from oven and allow to cool fully
GNACHE:

  • 3 1/2 oz bittersweet chocolate
  • 1/3 cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon Jameson whiskey (or other whiskey)
  • 1/2 teaspoon vanilla extract
DIRECTIONS:
  1. Gently heat cream on the stovetop or in the microwave
  2. Add chocolate and let sit for a few moments
  3. Stir gently until chocolate is melted and combined with the cream
  4. Mix in butter, vanilla, and Jameson
  5. Allow to cool until thick (semi-solid)
  6. Spoon into a pastry bag or plastic bag

THE FROSTING:

  • 1 1/2 cup powdered sugar
  • 1/2 cup butter (room temperature)
  • 2 tablespoons Baileys (or other Irish cream liquor)
DIRECTIONS:

  1. Pour all ingredients into a bowl
  2. Using a spatula (or electric mixer, if you're into that kind of thing) mix until very well combined
  3. Spoon into a pastry bag or plastic bag and chill until ready to use

Vegetable Noodle Soup





This is such a great recipe for a nice cold evening. So simple to make too. It will definitely warm your body right up.

INGREDIENTS

  • 2 tablespoons extra-virgin olive oil
  • 1 rib celery, sliced (about 1 cup)
  • 1 medium carrot, sliced (about 3/4 cup)
  • 1 clove garlic, smashed
  • 1/4 medium onion, about 1/2 cup
  • 1/4 teaspoon kosher salt
  • 1/3 cup orzo or other small pasta or egg noodles or broken upspaghetti
  • 4 cups low-sodium chicken broth (1 quart box, or 2 cans)
  • Small handful fresh parsley leaves, basil or dill, chopped (about 2 tablespoons)
  • 1/2 lemon, juiced (about 1 tablespoon)
  • Freshly ground black pepper
  • Serving suggestion: Whole-wheat crackers and cheese sticks

DIRECTIONS

Heat the olive oil in a medium saucepan over medium heat; add all the vegetables, garlic and onion. Season with the salt, and cook until tender, about 6 minutes. Add the pasta and cook until slightly toasted and golden, about 2 minutes. Add broth, and bring to a boil over high heat. Cook, covered, until pasta is just tender, about 8 minutes.
Stir in whatever herb suits you and lemon juice. Season with pepper and additional salt, to taste.

Garlicky Baked Shrimp


So once again we decided to have yummy Shrimp for dinner. This dish is very good but is very rich. I think next time i make this i will put less butter. But all in all it was great. We served it over angel hair pasta with a side salad. Hope you Enjoy!


Ingredients:

1 pound peeled and deveined medium or large shrimp
4 cloves garlic
2 tablespoons white wine (i used chardonnay)
kosher salt and black pepper
1/4 cup softened butter (maybe a little less)
1/4 cup panko bread crumbs
2 TBS chopped parsley

Directions:
Heat oven to 425° F. In a baking dish mix together the shrimp, garlic, white wine, 1/2 tsp salt, and 1/4 teaspoon pepper. In a small bowl mix together the butter bread crumbs and parsley. Sprinkle the mix over the shrimp and bake until shrimp are opaque throughout about 15 to 18 min. 






Pizza Balls

These are so super yummy and so easy to make. Your kids can even help make these they are so easy. Hope you Enjoy!!


Ingredients:

Pillsbury buttermilk biscuits (10 Count)
Pepperoni Slices
Chesse
Parmesan Cheese
Italian Seasoning
Garlic Powder
Pizza (marinara) Sauce
1 egg



SN* How many things of biscuits you will need will depend on how many you wanna make each biscuit makes a ball so a 10 ct will make 10 balls.
 * I used shredded colby jack cheese you can use mozzarella cheddar whatever you like

Directions:
Flatten out each biscuit (i used a rolling pin for this). Put a piece of pepperoni  in the middle then the cheese on top then another piece of pepperoni. Like a sandwich.




Gather edges of biscuit and secure


Line rolls in greased pan and coat with beaten egg. Sprinkle the Parmesan cheese, garlic powder and italian seasoning.  



Bake at 425°F for 18-20 mins




use the pizza/marinara sauce for dipping :) Enjoy these are scrumptious. 

** I think next time im gonna add an olive in there because i love pepperoni and olives on my pizza
