Roasted Vegetable PIzza


This is seriously like the best pizza i have every had and its not too bad for you either. 
The whole thing the way i made it was only 621 calories so you could eat half of this and
 only eat around 300 calories :) ENJOY!!

Ingredients:
1 9-12 inch tortilla (flour or whole wheat)
1/2 cup mixed roasted vegetables of choice ( i used sweet potato, butternut squash,
 red bell pepper and zucchini)
2 heaping TBS marinara or pesto sauce
3 thin slices fresh mozzarella
olive oil
salt and pepper

Directions:

Preheat oven to 450 degrees. Toss chopped veggies with a drizzle of olive oil and a 
sprinkle of salt and pepper on a baking sheet. Roast in oven until tender about 30 min.
 Remove veggies from oven and turp up heat to 475 degrees. Place tortilla in oven for 2 
min. or until it is slightly crispy.  Remove tortilla and spread with sauce of choice. Top
 with roasted veggies and layer on the fresh mozzarella. Sprinkle with a little olive oil
 and fresh ground pepper. Place pizza on a piece of tin foil or baking sheet and return 
to oven for 5-10 min or until edges are crisp and cheese begins to brown.
