Chicken, Zucchini and Eggplant


Chicken, Zucchini and Eggplant.. Very easy dish to make. I was originally going to do this with zucchini and yellow squash, however i couldn't find yellow squash so i decided to use eggplant instead and it turned out wonderful. I think yall will enjoy this dish very much. 

Ingredients: Makes 4 servings

4 skinless, boneless chicken breast halves
1/2 tsp salt
1/4 tsp ground black pepper
1 tbs butter 
1 tbs vegetable oil
1 small eggplant, sliced
3/4 lb sliced zucchinis 
1 medium tomato-peeled, seeded, and chopped

Directions:

In a large non skillet pan melt butter in the oil on medium heat. Season the chicken with half of the salt and pepper. Put the chicken in the skillet. Cook until lightly brown on both sides. Take the chicken out of the pan and put it to the side. Add the vegetables. Cook until slightly softened. Reduce heat and return chicken to skillet. Cover partially. Cook until chicken is white throughout but still juicy and vegetables are all done.
